"Lebanese" Rice Salad

This is a perfect filling salad - even my husband is a fan and he "hates" salads (actually he hates lettuce but this doesn't have any, so it's okay!).

200g brown rice
50g sultanas
6 - 10 dates, roughly chopped
50g pine nuts, toasted
15g shelled pistachios, roughly chopped
2 oranges, peeled and chopped into bite sized chunks
juice of 1 orange
2tbsp white wine vinegar
2 tbsp chopped fresh mint

Cook rice according to packet instructions and cool under cold running water. Drain thoroughly.

Mix all ingredients together and serve! Easy peasy and very delicious. Leftovers are still good next day as the rice just keeps absorbing the orange juice/vinegar dressing.
